We visit the Saint George church, home of one of the most detailed Mosaic maps in the region dating from the 6th century. The mosaic contains the earliest extant representation of Byzantine Jerusalem, labeled the "Holy City." It also provides important details about its 6th-century landmarks, with the cardo, or central colonnaded street, and the church of the Holy Sepulcher clearly visible. This map is one key in developing scholarly knowledge about the physical layout of Jerusalem after its destruction and rebuilding in 70 AD.

Then we proceed to visit Mukawer, or Machaerus the hilltop stronghold of Herod the Great. Upon Herod’s death, his son Herod Antipas inherited the fortress and it is from here that he ordered John the Baptist to be beheaded after Salome’s fateful dance of the seven veils. The name Valley of Moses (Wadi Mousa) comes from the story that Moses passed through the valley and struck water from the rock for his followers at the site of Ain Musa ("Moses Spring" or "Moses' Well"). The Nabateans built channels that carried water from this spring to the city of Petra. then proceed towards Wadi Rum, after we arrive to Rum, we are in for a Bedouin specialty dinner: ZARB.

What’s that you may ask? Well, it’s a mix of meat like lamb and chicken, rice, potatoes and carrots, placed in a hole in the ground, which is filled with flaming coals. The hole is then covered, and after a few hours, the meat and rice are all smoked, steamed, and grilled, all at the same time! Overnight in Wadi Rum.
